Starting Small
Our journey began with a desire to live long, healthy lives together. We started by quitting smoking and making small changes to our diet, like opting for Colby-jack cheese over processed cheese.
Facing Health Challenges
When Albert had to undergo triple bypass surgery, we spoke to a nutritionist who advised us to stop eating unnaturally colored foods. This prompted us to reevaluate our food choices and eliminate unhealthy options.
Overcoming Barriers
Living in an apartment building and having limited transportation options made it challenging to access fresh, healthy food. We relied on a dollar store nearby, which had limited options. We realized the importance of careful planning and budgeting to make healthier choices.
Setting Goals and Planning
Our goal was to become healthier, and we broke it down into smaller, achievable steps. We focused on meal planning, making budget-friendly and healthy staple meals that could be reused for multiple meals. We also utilized tools like salad spinners to save time and effort.
Mindfulness, Gratitude, and Attitude
Having hope, a supportive partner, and a positive attitude helped us along the way. We recognized each other’s strengths and weaknesses and worked together as a team. We are grateful for our journey and each other.
